Serves: 2–4
Time: 35 minutes
Gluten free, sugar-free, dairy-free

Ingredients

4 boneless, skinless chicken breasts, sliced
1 cup white mushrooms, sliced
2 bell peppers, julienne
1 small onion, sliced
1 tablespoon minced garlic
½ teaspoon cumin
¼ teaspoon lemon pepper
½ teaspoon chili powder
¼ cup olive, canola, or coconut oil
Juice of 1 lemon
12 gluten free tortillas

Instructions

Pat the chicken breasts dry and slice into ½-inch wide strips.

In a bowl, toss the chicken breasts with the cumin, sea salt, lemon pepper, and chili powder.
Heat the oil in a nonstick pan over medium heat.

Add the chicken strips, sliced onions, bell pepper, and mushrooms.

Cook, stirring occasionally, until the chicken is cooked through.

Before serving, drizzle lemon juice over the chicken and veggies.

Warm up the gluten free tortillas in the microwave or oven.

Serve the fajitas with shredded cheese, sour cream, salsa, guacamole, or whatever you’d like. Enjoy!
