No matter what age you are—you can never go wrong with pizza. It’s perfect for a night in, a night out, a family get together, your kiddos playdate—you name it—but with this recipe, we're adding a twist. It's pasta, with all the pizza flavors.

For this Pizza Bake recipe, we’re adding gluten free pasta as the base. You can even use other types of gluten free noodles, like chickpea, penne pasta, or “zoodles”—those super fun, and healthy, spiralized vegetable noodles. For a healthier twist on this meaty favorite, this specific recipe is made with turkey pepperoni.

If you’re looking for a vegetarian option—switch it up and add all veggies or customize the recipe to your kiddo’s desired taste preference. Add spinach, broccoli, kale, or even crumbled vegetarian ground sausage as a delicious substitute. Whatever they like on their pizza, they’ll probably enjoy in this Pizza Bake.


Yummy + Share: Pizza Bake

Serves: 12
Time: 30 minutes prep, 35 minutes bake time
gluten free

Ingredients

12 ounces box gluten-free pasta (penne, shells, or rigatoni shaped)
6 ounces turkey pepperoni
2 jars (14 ounces each) pizza sauce
1 green pepper, chopped
1 half onion, chopped
1 cup mushrooms, sliced
2 cups mozzarella cheese, shredded

Instructions

Lightly spray a three-quart baking dish with non-stick cooking spray and set aside.

Boil your entire box of gluten free noodles per the instructions on the box. Drain and mix in one jar of the pizza sauce until the noodles are thoroughly saturated. Set aside.

Spray a non-stick skillet lightly with cooking spray.

Sauté your veggies, the green pepper, onion, and mushrooms, until lightly cooked, about 2-3 minutes. Remove from the stove.

To assemble the bake

Layer half of the sauced noodles in the baking dish.

Top with all of the veggies and one cup of cheese. Then layer the rest of the noodles and top with the other jar of sauce.

Layer the next cup of cheese and top with the turkey pepperoni, from edge to edge—covering the top like a truly loaded pepperoni pizza.

Bake covered with foil in a 350-degree oven for 20 minutes.

Uncover and finish baking for 15 minutes to crisp up the turkey pepperoni.

Take out. With a large spoon, scoop each serving into a bowl.

Top with parmesan cheese or red pepper flakes.

This dish can be assembled ahead of time and baked right before serving
