Savory and Delicious Vegan Portobello Mushroom Steak Sandwich

This recipe features one of our favorites ― portobello mushrooms! Portobello mushrooms are versatile, low in calories, and a good source of vitamins, minerals, and phytonutrients. Their meaty texture makes them a great plant-based substitute for this delicious vegan portobello mushroom steak sandwich. Enjoy!

Ingredients

4 large portobello mushrooms with stems removed and dry brushed clean

Arugula or arugula microgreens

Ciabatta buns

Red onion

Vegan Butter 

Marinade:

3 tbsp balsamic vinegar

3 tbsp tamari or soy sauce

2 tbsp grapeseed oil or preferred oil

1 tbsp vegan Worcestershire sauce

1-2 tsp liquid smoke or 1 tsp paprika

1 garlic clove

½ tsp granulated onion

salt and pepper for taste

Directions

1. Whisk together all marinade ingredients in a baking dish. Add mushrooms and liberally brush the marinade on all sides.

2. Let mushrooms sit for 15 minutes, continuing to brush with the marinade.

3. Heat grill or skillet on medium-high heat, brush with oil and place mushrooms on when hot.

4. Press on the grill and cook each side for 5-6 minutes for grill marks.

5. Continue grilling until tender and browned.

6. Toast the ciabatta bread to your preference.

7. Add a light spreading of vegan butter (Earth Balance works well).

8. Place your mushrooms on the ciabatta and top with arugula, slices of red onion, salt and pepper, and a sauce of your choice like vegan aioli or steak sauce (if desired).

9. Serve and enjoy!
